In a pan, heat the oil and add urad dal, chana dal, cumin seeds, coriander seeds, shallots, garlic, red chilly and tamarind one by one. Wait until it cooks
Now add beetroot pieces and cook for 10 mins until it is soft
Now let all ingredients cool down. Once it reduces heat add it to a mixer jar along with coconut, curry leaves and salt
Blend it to a smooth paste along with some water
Now adjust the consistency to desired by adding some more water
Now add the prepared tempering on to the chutney
Now the chutney is ready to serve
